Decadent Cream Cheese Apple "Crumble"

Yea I know this is better suited for autumn, but comfort-food is still comfort-food and sometimes I need comforting regardless of the seasons.
This "crumble" features a soon to be released soft "cheesy" decadent creamy spread though you are welcome to use any of your favourite mild soft cheese in its place. The "crumble" is a quick and easy granola-eques thing by using rolled oats.
What you need
Filling
- Apples; I used 4 "cooking apples" that equated to 750g when sliced up
- Maple Syrup; 80g
- Cornstarch; 1TBSP/20g
- Cinnamon; 1TSP/3g
- Salt
Topping
- Rolled Oats; 180g
- Cinnamon; 1TSP/3g
- Maple Syrup; 100g
- Salt
- Food by Sumear Decadent Creamy Spread (not yet released) or another vegan cream cheese alt.
Serving with suggestions
- Food by Sumear Clotted Cream
- Vegan custard
- Vegan ice cream
What to do
Filling
- Peel and slice your apples into chunks. Approx 3cm size I think
- Into a saucepan, add all the filling ingredients, mix so everything is coated and place over a medium heat covered.
- Stir occasionally to ensure nothing burns at the bottom. Keep covered as much as possible so the steam cooks the apples
- Cook for 20mins or till soft but still retains a bit of firmness. Add salt to taste. Not too much now, just a pinch to level up things.
Topping
- In a mixing bowl, add all dry ingredients with a pinch of salt and mix well.
- Add a bit of maple and mix. Add a bit more and mix until well incorporated
Assemble & Baking
- Preheat oven at 180ºc fan
- In an oven dish, add your apple filling and spread evenly
- Add dollops of Food by Sumear Creamy Spread or another cream cheese alt. Pat down gently but not to hard that it sinks to the bottom of the dish
- Add the crumble topping layer and spread evenly
- Bake for approx 20 mins or until golden brown
- Remove from oven and leave to cool a bit so the topping can harden and bond a bit
- Serve with a healthy dollop of Food by Sumear Clotted Cream
