Authentically developed by an ex-dairy cheesemaker for true dairy-like flavours that are paired with great textures. Uses dairy-methods for greater flavours without any tricks.

A product of expert dairy-cheese maturing methods and science, with a touch of crazy. This vegan matured cheese has been uniquely ripened in an anaerobic state where molds, bacteria and yeast thrive by breaking down the sugar, fat and proteins in the cheese. This greatly alters the texture and flavour compounds. With a ugly chewy rind, this cheese makes a great statement on a cheeseboard that you can't get else where.

Tasting Profile
Deep savoury matured notes. Mellow butter-dairy-sour-like notes. Rind has strong flavour that bites back with hints of earth-blue notes.
Texture Firm with hints of creaminess. Rind is a bit chewy with a few (rare) pleasant salt crunchies.

Expertly aged in a cheese-cave-room and cared for weekly to develop a strong and flavourful rind.
