This blue vegan matured cheese has been uniquely ripened in an anaerobic state where molds, bacteria and yeast thrive by breaking down the sugar, fat and proteins in the cheese. This greatly alters the texture and flavour compounds. With an ugly chewy rind, this cheese makes a great statement on a cheeseboard that you can't get else where.

This version of the Blue Verdure-mead is a product of skill that is cheese-making where the art of ageing truly comes in play.
A wheel of the standard, strong Blue Verdure-mead is taken (meaning, it is the same ingredients, same ratios, with the mold too) and wrapped. The lack of oxygen allows the mold and microbes to thrive by breaking down the sugars and fat within the cheese as their source of food.
The breakdown of fats gives a different level of flavour compounds while completely altering the texture.
This is my favourite version of the blue cheese.
