  • Due to a broken cheese-cave and plans to relocate into a new property in the near future, this item is not currently in production. However trying my best to get it back onto the scene asap.

    Authentically developed by an ex-dairy cheesemaker for true dairy-like flavours that are paired with great textures. Uses dairy-methods for greater flavours without any tricks.

    UK's first authentically developed cultured long-aged cultured cheeses. Matured in our faux cheese-cave alongside the blue cheeses.

    Tasting Profile Inner-most paste has notes of lactic, fresh flavours. Hints of savoury. Nutty. Tangy nature. Outer-paste is more savoury with subtle hints of earthiness. The rind is extra savoury, salty, earthy.
    Texture Innermost-centeral paste is firm, but creamier and softer than the outer paste. Has a crumbly nature to it. The inner-outer part of the paste is more firmer whereas you get closer to the rind, becomes more harder. 
    Maturity Dependant on variety - last version was 6 months matured.

    Notice: This wheel is part of the experimental long-aged range. Lessons learnt from the 4-month version have not yet come into play yet to provide an extra mature cheese without the dry spots. The cause is due to too much moisture & fat loss. An easy fix. There have been cheese-cave problems though with the climate system. That meant even more moisture was lost. This is still a very good cheese, I promise but improvements will be made in the future for greater perfection :)

  • Eating:

    Recommend enjoying this masterpiece on a cheeseboard only. Remove from fridge 15-30mins (still wrapped) before enjoying.

  • UK's first and only long-aged vegan cheese (at time of writing) with a developed natural rind. Expertly crafted and matured in a cheese cave with 90% humidity to ensure flavours are created slowly and the texture hardens without drying.

    Results are the product of skilled dairy-cheese ageing methodologies.
